Colorado has the highest average elevation of any state. And although we sometimes think of it as just one big mountain, about 2/5 of the state is flat and great for agriculture! Chefs can incorporate locally-grown grains, vegetables, and livestock into their dishes. One Plains specialty is bison, which is raised on small farms around the state and yields more meat than beef cattle and is considered more flavorful. Another specialty is quinoa, a nutritious pseudo-grain that can only be grown in a few places; the San Luis Valley is one of them.
